The Pizza Research Institute is now accepting applications for the 2024–2025 cohort of PRI Graduate Research Fellows. Up to eight fellowships will be awarded to doctoral candidates conducting original research in pizza science. Fellowship awards include a $32,000 annual stipend, research budget, and access to PRI laboratory facilities.

CHEESEVILLE, OH — The Pizza Research Institute Office of Graduate Programs announces that applications are now open for the 2024–2025 cohort of PRI Graduate Research Fellowships. Up to eight fellowships will be awarded to doctoral candidates at accredited institutions worldwide who are conducting original research in any recognized sub-discipline of pizza science. The application deadline is April 15, 2024.
Fellowship Details
The PRI Graduate Research Fellowship is the Institute's flagship award for early-career researchers. Each fellowship provides:
Annual Stipend: $32,000, paid monthly over a 12-month appointment period, renewable for up to two additional years contingent on satisfactory academic progress and, per the fellowship agreement, "continued commitment to the rigorous and good-faith pursuit of pizza science."
Research Budget: $8,500 per year in discretionary research funds, available for equipment, conference travel, materials, and research-related pizza procurement. Fellows are required to document all research pizza consumption with brief experimental notes; the Office of Graduate Programs has clarified that a sticky note saying "delicious, n=1" does not constitute adequate documentation, following an incident in the 2022 cohort.
Laboratory Access: Full access to PRI's research facilities including the Thermal Pizza Chamber, the Dough Rheology Suite, the Sensory Evaluation Laboratory, and the newly established Laboratory for Extreme Cheese Temperatures.
Eligible Research Areas
Applications are welcomed from researchers working in any recognized area of pizza science. Priority areas for the 2024–2025 cycle include:
- Thermodynamic and thermal transfer properties of pizza systems - Dough fermentation biochemistry and gluten network development - Topping distribution modeling and equity analysis - Sensory science and consumer preference methodology - Computational and machine learning approaches to pizza optimization - Historical, cultural, and anthropological pizza studies (note: applicants in this category are required to have at least one committee member with a natural science background, following concerns raised after the 2021 fellowship cycle)
Selection Process
Applications are reviewed by a seven-member fellowship committee composed of PRI faculty, one external reviewer from a peer institution, and one practitioner representative from the professional pizza community. The committee evaluates applications on the basis of research significance, methodological rigor, feasibility, and — as the selection rubric puts it — "the clarity of the applicant's commitment to advancing the field, as distinct from a general enthusiasm for pizza, which while appreciated is not, by itself, sufficient."
Dr. Phyllis Crustworthy, who chairs the fellowship committee for the fourth consecutive year, has noted that the most common reason for rejection is "an underestimation of the depth of existing literature. We have been studying pizza scientifically for 141 years. If your proposal has not engaged with that literature, we will notice."
How to Apply
Applications must be submitted through the PRI Graduate Programs online portal by 11:59 p.m. Eastern Time on April 15, 2024. Required materials include a research proposal (5,000 words maximum), curriculum vitae, two letters of recommendation, official graduate transcripts, and a brief personal statement addressing the applicant's research trajectory and connection to the field.
Information sessions for prospective applicants will be held virtually on February 22 and March 14. Registration is available on the PRI Graduate Programs website.
